About Our Grains:

All FYBS grains are organic and glyphosate-free, sourced from several vendors across the United States. As soon as the grains arrive at our shop, we remove them from their bags, place them in airtight containers, and flush them with CO2. This eliminates the need to refrigerate or freeze the grains to protect against pesky critters naturally attracted to "real food."
 
We also offer storage containers to keep your grains pest-free during storage! See storage options below in Related Products. The 1-gallon glass jars typically hold up to 5 lbs, the 2-gallon buckets hold up to 10 lbs, and the 6.5-gallon buckets hold 40–50 lbs of grain. Your lid options for the buckets matter: regular lids are harder for people to open but are less expensive, while Gamma lids are pest-proof, airtight, and easier to access. With your purchase of a container and grains, you also get a free scoop for the grains!
 
Additionally, we offer small-quantity milling services. If you don’t have a mill and want to try fresh-milled flour with our grains, we can mill your order. If you choose to have your order milled, we will mill the flour on Monday morning and ship it out in the afternoon. Fresh-milled flour starts to oxidize, and the essential amino acids begin breaking down rapidly, so please store it in the freezer until you’re ready to use it. In the freezer, it stays good for 6 months to 1 year.
 

About This Flour:

Our Freshly Milled Soft Red Wheat Flour is whole-grain pastry flour at its finest — milled the morning your order ships, with all the bran, germ, and endosperm intact. The kernel’s low protein (~8–10%) and minimal gluten development mean this flour produces tender pie crusts, flaky biscuits, crisp cookies, and crumbly crackers without the chew that hard wheat brings. The reddish bran gives it a slightly fuller flavor and warmer color than Soft White pastry flour, with the same delicate behavior in the oven. Use as a 1:1 substitute for white whole-wheat pastry flour, or blend with a bread flour to soften the crumb and add complexity.
 
Storage: Fresh-milled flour begins oxidizing immediately. Freeze on arrival to preserve its peak character for 6–12 months.
