Scottish Ale is highly flocculent, versatile, and reliable as a house strain that can produce neutral to complex flavors depending on where it ferments within its wide temperature range. Ferment in the low 60's for a clean profile, or ramp it up into the mid 70's to bring out its expressive esters. Great for malty profiles but won't mute the hop character. Great for producing very clear beers, as it flocculates even better than West Coast Ale I (OYL004).
