Cichorium intybus, commonly known as chicory, is a perennial herbaceous plant in the Asteraceae family, native to Europe and naturalized in North America, China, and Australia. It features bright blue flowers, toothed leaves, and a large taproot, similar to its relative, the dandelion. Cultivated for thousands of years, chicory’s roasted root is widely used as a coffee substitute for its deep, robust flavor, especially when coffee is scarce. The root is typically prepared as decoctions, extractions, or infusions, while the leaves are used in salads or as spring tonics. Chicory contains fructans, including inulin (not to be confused with insulin) and oligofructoses, which are special carbohydrates.
 
Available as cut roasted root or roasted root powder, chicory retains its flavor and quality when stored properly, making it ideal for beverages, culinary dishes, or herbal preparations. Chicory is also called kasni.
