Capsicum annuum, commonly known as cayenne, is a member of the Solanaceae (nightshade) family, which also includes bell peppers, paprika, red chili peppers, and pimento. Native to the Americas, cayenne has been used for over 9,000 years as a food and for its healthful properties. The pepper’s bright heat, attributed to capsaicin, is measured on the Scoville scale, with our cayenne powder ranging between 20,000–50,000 Scoville Heat Units (SHU), indicating moderate to high pungency. Capsaicin, an active component, produces a warming or burning sensation without causing actual tissue damage.
