Illicium verum, commonly known as star anise, is a small tree native to China and Vietnam, belonging to the magnolia family. Its distinctive star-shaped, rust-colored fruits are harvested and dried before ripening. Known for their intense, licorice-like flavor—hotter, more pungent, and bitter compared to European anise—star anise pods are a key ingredient in Chinese five-spice blends and “red” cooking, where foods are slow-cooked in soy sauce. They enhance dishes like marbled eggs, Asian soups, Thai iced tea, and Peking duck, and are often chewed post-meal to freshen breath.
Star anise pods can be used whole in infusions, mulled wine, herbal syrups, liqueurs, tinctures, or homemade mouthwashes. Their potent flavor requires sparing use, and they should be stored in a tightly sealed container in a cool, dark place. The pods can also be consumed as a strong tea, capsule, or extract. Common names include Chinese star anise and takkola.
